This is how I make my lunch, and I thought I’d share with all the fitspo people out there because it’s easy, healthy, natural, and you can make a whole weeks’ worth at a time and it won’t go bad in the fridge.
I just cook all the ingredients one after another in the same pot and layer them as I go, but I used to cook them all at once in a lot of pots.
This week is brown rice on the bottom, black beans, frozen mixed vegetables, sliced grilled chicken seasoned with Cajun spices, and then a few more vegetables to fill in the gaps at the top.
Then when it’s lunch time at work I just microwave it in the jar with the lid off, and then you can either dump it onto a dish or eat it out of the jar. I also think it looks really nice :) It’s a good way to be prepared for the week and be consistent, but you also have the option to change what’s in the jar so it doesn’t get boring.

I was thinking about ordering a pizza for myself, then a girl walked by with the fittest, nicest, most athletic butt I’ve seen. Then I decided that’s the butt I want, so I ate my cheerios and an apple instead. No regrets here.
